  • Butter 4 tbsp

Make sure to thaw and strain your lobster if it's frozen/bagged. You can choose to pre-chop your lobster meat for easier incorporation into eggs or leave pieces whole but make sure to lightly warm in the pan just enough so that it's warm throughout.

Instructions

Grab a large skillet, place on stove top on medium-high heat. Melt the butter then add the tomatoes and shallots. Stir continuously to sauté until the edges become slightly crispy (this should take about 5 to 7 minutes). Add the eggs and scramble as per your liking. Add lobster meat and toss lightly to mix. Now throw on your chives, salt, and pepper.

2. Classic Salmon and Caviar on Homemade Blinis

Impress your family and friends with easy to make salmon and caviar blini recipe:

  • All-purpose flour 1 cup
  • Milk 3/4 cup 
  • Baking powder 1/2 tsp
  • Pinch of Salt ~1/2 tsp
  • Large egg 1
  • Melted butter 1 tbsp
  • Butter for cooking 1 tbsp
  • Caviar 1 ounce 
  • Cold Smoked salmon - 4+ ounces
  • Crème fraiche ½ cup
  • Your choice of garnishing herbs like Dill or Chives

Instructions

In a mixing bowl, whisk together flour, baking powder, salt, then mix in milk, melted butter, and egg. Whisk together. Preheat skillet or griddle over medium-high heat. Brush with extra butter. Pour a tablespoon of batter onto the preheated griddle or skillet. *If your batter is slightly too thick to pour, add a tbsp or 2 more of milk. 

Flip once bubbles start to form and slightly brown underneath, about 1.5 - 2 minutes. Repeat with the rest of the batter. When done, distribute the salmon, crème fraîche, and caviar onto the blinis. Sprinkle on chopped chives or dill for a pop of contrasting color and flavor. 

Serve alongside sparkling wine or light vodka-based cocktail.
