Instructions

Grab a large skillet, place on stove top on medium-high heat. Melt the butter then add the tomatoes and shallots. Now throw on your chives, salt, and pepper.

2. Classic Salmon and Caviar on Homemade Blinis

  • All-purpose flour 1 cup
  • Milk 3/4 cup 
  • Baking powder 1/2 tsp
  • Pinch of Salt ~1/2 tsp
  • Large egg 1
  • Melted butter 1 tbsp
  • Butter for cooking 1 tbsp
  • Caviar 1 ounce 
  • Cold Smoked salmon - 4+ ounces
  • Crème fraiche ½ cup
  • Your choice of garnishing herbs like Dill or Chives

Instructions

In a mixing bowl, whisk together flour, baking powder, salt, then mix in milk, melted butter, and egg. Whisk together. Preheat skillet or griddle over medium-high heat. Brush with extra butter. Pour a tablespoon of batter onto the preheated griddle or skillet. *If your batter is slightly too thick to pour, add a tbsp or 2 more of milk. 

Flip once bubbles start to form and slightly brown underneath, about 1.5 - 2 minutes. Repeat with the rest of the batter. When done, distribute the salmon, crème fraîche, and caviar onto the blinis. Sprinkle on chopped chives or dill for a pop of contrasting color and flavor. 

Serve alongside sparkling wine or light vodka-based cocktail.
