An organically farmed, sustainable hybrid Beluga caviar, derived from two prized sturgeons historically harvested for their roe from the Black, Azov, and Caspian Seas: the Beluga and the Sterlet. Since 2005, the importation of pure Beluga sturgeon caviar has been banned to protect wild populations. To ensure sustainability, DNA testing is conducted on these hybrids. The roe, from the offspring of the female Beluga sturgeon (Huso huso) and the Sterlet (Acipenser ruthenus), produces a "Bester" Hybrid caviar with beautiful gray to dark amber hues and a rich, creamy, slightly nutty flavor unique to Beluga and Osetra.
This farmed, sustainable, and organic caviar is truly worthy of a special occasion. The grains are larger than those of pure Sterlet caviar but smaller than those of wild Beluga caviar. While it may lack the size of wild Beluga eggs, it more than makes up for it with incredible flavor and a smooth texture, offering creamy and buttery notes that slowly evolve into a lingering, briny, and slightly nutty finish. A highly recommended choice for any occasion!
