The Dolium Silver (filtered) and the Dolium Gold (unfiltered) are both superior category extra virgin olive oils obtained directly from the finest Italian olives. The modern process by which this EVOO is made is through low-speed centrifugation, instead of traditional pressing, 

These perfectly crafted olive oils are bottled and completely wrapped in foil to protect from sunlight sunshine exposure and prolong their delicious, slightly fruity flavor.

Dolium is named after the traditional clay potbelly jar used by Romans to stock foodstuff in ancient times. It was the most common container used for wine and extra virgin olive oil during the long sea transports in the Mediterranean sea.  
 
The extraction process calls for specific expertise of Casa Olearia Taggiasca: the process starts with perfectly healthy olives, which are harvested through 'brucatura' (by hand) or by 'bacchiatura' (by beating the branches with a stick), collected in a fine taut net at the bottom of the tree, stored properly, then brought to the oil mill in the shortest time possible.

In place of traditional pressing which puts a lot of stress on the fruits, the modern method of low-speed centrifugation is used: separating the oil from water by kneading, without needlessly causing the olive pulp to heat up and reducing oxidation to the minimum.

Without having to separate the oil from water, the centrifugal extractor produces something truly remarkable: a high-quality, concentrated-polyphenols oil that is more dense, opaque, colorful, and fragrant, with low acidity.

 

Unfiltered GOLD oil:

Pros: Packaged just after pressing in the mill, More intense and fragrant appearance due to the micro particles of pulp and olive kernel

Cons: Deposit of micro particles at the bottom of the bottle (recommended to separate the bottom from the rest of the oil in spring), More turbid appearance, Lower resistance to aging

Filtered SILVER oil:

Pros: Improved stability, preservation and resistance to aging, higher smoke point, more clear in appearance

Cons: Slightly less health properties than unfiltered

 

The filtration process does not significantly affect the chemical and physical parameters. In fact, acidity, number of peroxides, constant spectrophotometrics, biophenol and tocopherol content, chlorophyll content and acid composition remain almost identical.

First time...

I normally buy Ranieri EVOO. But since the pandemic the price has doubled and availability is scarce. This is good olive oil, but not as good as Ranieri.
