Newbie to Roe...

I'm trying this because I wanted to add this to my rotation of nutrient dense food. Affordability is important is important, because I want to do this a few times a year. I got the smoked salmon, smoked yellow and the paddlefish. I like the size of the paddlefish roe, they're little and cute. They're tasty on scrambled eggs, and give a pretty contrast of color on top of yogurt. I will buy again.

caviar newbie tests 2 ounce Paddlefish...

I saw a program on Kentucky public television that Kentucky has a commercially successful alternative to caviar based on a fish related to the best caviar but it grows in the United States Mississippi river and its contributaries. I made a nonstandard internet search for "Kentucky Caviar" and among the choices I saw CaviarStar.com. I had previously bought salmon roe from CaviarStar.com so I clicked on that link. As I compared prices I selected 4 count of two punce jars. It took adjustment to my meat drawer and a digital thermometer to preserve the roe. My meat drawer allow adjusting leakage from my freezer to meat drawer. So far I ate one of four jars. I was surprised at the small egg size. About fifty years ago I ate many canapes of genuine Russian caviar after the end of a party that had previously prevented children including me from eating it because ot was too expensive. Most guests at the party were disgusted at eating fish eggs. There was a base of bread or toasted bread witjh what I thought was cream cheese or maybe sour cream with a modest amount of caviar. After each taste I paused to let others have their turn. The grownups had moved on and my fellow children were disgusted with eating fish eggs. I finished it all and I have never to the best of my memory ever ate genuine caviar. In rcent years I have ate Romanoff caviar at the grocery store with Daisy sour cream which is very close to creme fraich, I forget the spelling. I intend to buy a closer relative to original caviar for a side by side comparison. True original caviar is not available in the US because of overfishing of Beluga fish.

Paddlefish versus...

We buy both every season from Caviar Star and try them together. For taste my family likes the hackleback the best, however when you factor in the cost per oz Paddlefish becomes a serious contender. Its like serving the best wine first and then switching to the less expensive after a few tastes. We will continue to buy both.

I was concerned the eggs might be too small like cheap grocery store "caviar", but once fluffed up, they looked good and tasted great to seasoned and new caviar eaters alike. Paddlefish over Hackleback

We have often had the debate as we order both Paddlefish and Hackleback caviar. What a toss-up! Both are fabulous for the price. Each changes with the elements. Sometimes one wins over the other. Other times, very arguable as to which we prefer. Best plan is to order both! But this order, Paddlefish won out. Bit creamier and rounder.

Paddlefish little muddy in taste and texture but...

I am now thinking of Paddlefish as "puddle fish" because it's a little muddy in taste and particularly soft texture, no "pop" to it. But otherwise it tastes good. It likely would be good in a combination with other foods eg in scrambled eggs, where texture would t be as noticeable.

American Paddlefish caviar should not be under-estimated. Eating it with a spoon is the way to go.The Caviar Star 1 lb tin was excellent - not too salty and by far better value than many other caviars. Delivery was on time and ordering online was easy.

Caviar Flight

For my husband’s birthday, I ordered several different caviars. We love caviar, but have only had high end types. I was curious about trying some ‘every day’, more affordable types. I ordered paddlefish, bowfish, hackleback, Arctic char and golden Great Lakes whitefish. The Arctic char was our favorite, as far as texture, but we enjoyed all of them. Will definitely order regularly from now on.

you need an ice packet on the bottom as well as the top . my package was warm on the inside bottom as were the bottoms of the jars. it was 100 degrees outside and the fed-ex truck was not air conditioned.

I'm fairly new to caviar/roe so I my experiences are limited. I found this one to be the best tasting of all the ones I've tried so far. While the texture was not as firm as I understand the pricier offerings to be, the flavor was fantastic, rich and buttery with just a hint of nuttiness on the finish. good taste tad mushy

The taste of this caviar is very spot on, however, after about 1 hour exposure to air it does start to have a faint metallic or muddy aftertaste. The texture was not expected, and did not pop as I thought it would - I'm not sure why. I've tried paddlefish from 4 different places and only once (on a shelf at bevmo) found one that had a pop.

4 oz. jar Paddlefish caviar.

The product was excellent. Received in California from N. Carolina very fresh. Block of ice in pouch was still frozen inside styrofoam container with products.Delivered on exact date that I requested. Caviar was firm with the perfect hint of saltiness. Was hit of the party. Also ordered creme fraiche and cocktail blini. Creme fraiche was very good as were blini. I did, however have Svetlana, a friend from Russia, bring large homemade blini. Sorry Caviar Star but Svetlana's home made blini were better than cocktail blini. Overall though the caviar and creme fraiche were above excellent.

Pleasantly surprised

Bought a 2 oz to check what all the fuss was about. People have told me Hackleback caviar is very close to sturgeon caviar. The color and size of the pearls were very similar and the taste wasn't far off, but the texture was quite different from some of the sturgeon caviars I've tried. Nonetheless at this price, I don't think you can get a better deal. Looking forward to buying another batch when I have guests come over next time!

Ordered 4 oz of each for comparison. The items were well packed and delivered on time at a very competitive price. The sturgeon was definitely better than the paddlefish, and both were enjoyed by my guests, but neither had the snap and depth of flavor that I have experienced with caviar from some other highly rated suppliers.

Paddlefish Review

Over the years I've enjoyed and served many domestic and imported varieties of caviar. I recently had paddlefish caviar and smoked trout roe from Caviar Star sent to California for a family occasion. Those new to caviar and those more experienced than I touted the superb quality of the paddlefish and the surprisingly delightful flavor of the trout. Service, shipping and advice were all perfect; I'll be doing this again and often. Many thanks to Stephanie..my new caviar advisor!

Tried 3, all good

We bought 3 to try: American Paddlefish Caviar American Hackleback Sturgeon Caviar American Bowfin Caviar All were delicious. The more than 3x price difference between the Bowfin and the Hackleback was not supported by the taste, since all were good. A couple of people said the Hackleback was the only one that did not have a "fishy" overtone, I did not detect any "fishiness" in the others. The Bowfin did seem to be the saltiest but that is just in comparison, by itself it is just mildly salty. The Paddlefish is interesting in that it was a pale pewter color which stands out, and the eggs are VERY soft - quite velvety. I would recommend this as a good counterpoint if you are doing a tasting with different colors and textures. It is quite elegant looking. In summary: if you are looking for a very tasty caviar at an incredibly low price, the Bowfin is amazing; especially if you are doing a party and need to buy a lot. The Paddlefish is interesting as described above. The Hackleback was liked by everyone and though it is expensive compared to Bowfin, it is a really great price compared to other sturgeon caviars.

Paddlefish caviar 2016

I have eaten Paddlefish Caviar for many years from many different sources and it has been rather uniformly yummy and what caviar should be. I have to say that this batch was somewhat different (perhaps a different species??) in that the eggs were somewhat smaller than usual and a much milder tasteand somewhat saltier than I was used to. I am going to have to compare very soon with caviar from another source. This is not to say that this caviar was bad..it surely wasn't. JEL-Chicago

A new Christmas tridition

We decided to change our traditional Christmas morning breakfast this year and go a little decadent as we were now retired. We saw an article in the Southern Living December issue about American caviars so we ordered several and treated ourselves and my sister who was visiting for Christmas to something new. Unlike some imported caviars we have tasted both the Bowfin and Paddlefish were light in texture and delicate in taste we were very pleased with both products. We served them traditionally with chopped hard boiled egg, chopped red and green onion and crème fraiche. We plan on continuing this new tradition.
