American Paddlefish, also known as "spoonbill" due to its long, duckbill-like snout, is a cartilaginous relative of the Hackleback sturgeon, wild-caught in the Mississippi River. Our premium Paddlefish roe is harvested from the Mississippi and White River systems in the United States, primarily in Tennessee and Arkansas. The roe ranges in color from light green to dark steel gray and offers a flavor profile comparable to Caspian Sea Sevruga. It’s a fine, yet more affordable, alternative to traditional sturgeon caviar.
