Description
Limited stock available due to the wild nature of the product and seasonality.
Native to the Missouri and Mississippi River regions, American sand sturgeons (also known as hackleback, shovelnose, or switchtail) are faster-growing than most other species, reaching up to 38" at maturity. Harvested from the world’s smallest sturgeon, this caviar is small and firm, with all the rich characteristics and flavors of classic wild sturgeon roe. The glistening black eggs, with hints of emerald and gold, make Hackleback our most popular domestic sturgeon caviar.
The roe is dark and firm, with a very mild, subtle flavor. As the only commercially fished sturgeon in the United States, Hackleback represents the last of the American Wild caviars—a truly exceptional, wild-caught U.S. product.
Each jar is hand-packed and carefully inspected for optimal color, size, freshness, flavor, and texture. For additional details on shipping, usage, and privacy policies, please visit our Policy Page Policy Page.
