Description

The most-highly sought after black truffle, the Perigord (tuber melanosporum) is known to be stronger in smell and taste than the truffles harvested in summer. Due to limited supply and high demand, this precious fungi is rarely sold fresh in the U.S.A. With their smoky aroma and rich flavor our fresh winter truffles are the ultimate addition to a fine dining entrée. As the season draws to a close our black winter inventory is limited. Get this rare seasonal product before it's too late.

  • Tuber Melanosporum, called the black truffle, Périgord truffle or French black truffle, is a species of truffle native to Southern Europe. It is one of the most expensive edible mushrooms in the world.
  • The fruiting bodies exude a scent reminiscent of undergrowth, strawberries, wet earth or dried fruit with a hint of cocoa. Their taste, which fully develops after the truffles are heated, is slightly peppery and bitter.
  • If stored at room temperature, the aromatic compounds dissipate, while storage at around the freezing point (0 °C) leads to an increased synthesis of these compounds.  

Product life: 1 to 2 weeks, kept into a refrigerator at 37.5 F (3 C ), wrapped in paper towel.

We recommend consuming the truffles as soon as possible. In order to ensure top quality enjoyment, we recommend consuming the truffles soon after they are received

Fresh Truffle orders may take up to 24 hours to process. 

  • All Fresh Truffles are shipped via Priority Overnight. Orders must be received by 12 PM EST Monday-Thursday to receive the next day. Orders placed after the deadline or on the weekend will then ship Monday or Tuesday. 
  • Weekly shipments are received from Europe.

  • Ships in an insulated box from New Jersey.

Black Perigord Truffle Season is typically Decmeber to March, with strongest aroma and flavor in January & February.

Average but not...

First I want to say that every experience I have had with caviar*up until now has been flawless. I do not consider this to be a reflection of the business, but it is a reflection of this particular order experience. In advance of Valentine’s Day and my wife’s birthday I ordered caviar and truffles to be delivered for the weekend. The caviar and all of the accompanying pants arrived as expected on Friday. The black truffles however did not arrive until the following Monday. Upon receipt, they were as expected in their appearance, but the flavor was lacking. There’s nothing wrong with them, and they were still enjoyable, but they did not have the pungent aromatic properties I expected based on my past experience with black winter truffles. All this being said, it will not preclude me from ordering again, but I will be sure to plan for them to arrive further in advance of when I plan to use them. Truffles on the Tuesday after Valentine’s Day just doesn’t have the same impact as truffles served with mushroom risotto and lamb for the special day…
