You don’t have to travel all the way to Russia or Iran in order to find the finest caviar available. About an hour's drive away from the the town of Bordeaux in the South of France lies the aquaculture and caviar production site, Prunier. The Prunier Farm can be found in the luscious landscape of the Dordogne, idyllically situated on the River Isle. Here, about 150,000 sturgeon call Montpon-Ménestérol, a town in the county of Gironde, their home. They live in woodlands outdoors, in a large pool connected to the River Isle through an open water circuit.

Prunier has been perfecting the art of French food since 1872, opening the first caviar house in 1921 with caviar made from sturgeons caught along along the rivers of Bordeaux. Osetra Sturgeon were traditionally fished from the Caspian Sea but this highly-regarded species is now raised by caviar experts in aqua farms all over the world. After at least a decade of care the sturgeon to grow into maturity, producing glistening, large eggs that are carefully processed and malossol cured. With a color ranging from dark to light amber brown and a pronounced, pleasingly nutty flavor and creaminess, this French Osetra caviar is sure to be appreciated by the caviar novice and connoisseur alike. Each tin is handpicked and selected for its color, size, freshness, flavor and texture.

Osetra Caviar

A wonderful caviar that starts off very buttery and smoothly transitions to a mild brine on the back end. I always give 4 only because I'm not sure I have ever had anything that is truly perfect but I carry the hope.

Wasted...

I asked for the delivery to occur by Valentine's Day and I provided the gate code and asked that it be left on the side porch, as I've done in the past. The UPS tracking indicates that it would be delivered by Valentine' Day but it did not arrive until the day after. Worse, the box was left at the gate in the pouring rain. It didn't matter because I was out of town so when I returns several days later I discarded the entire package. I know from experience how good the product is but if it can't be delivered reliably, it's not worth the risk at all.
