Caviar Recipes - Rack of Lamb with Paddlefish Caviar and Arugula Pesto

Ingredients
Rack of lamb chops EVO Salt & pepper Arugula Parmesan cheese Garlic cloves Paddlefish caviar | 8 2 Tbsp. + 2 Tbsp. To taste 2 cups 1/4 cup 2 2 oz. |
Instructions
- Sear the 8 lamb chops in 2 Tbsp. of Extra Virgin Olive Oil to the temperature desired.
- While the lamb chops are searing, make the pesto in a food processor by combining the arugula, Parmesan cheese, garlic and 2 Tbsp. of Extra Virgin Olive Oil and processing until smooth.
- Top the lamb chops with an equal spoonful of pesto.
- Top the pesto with an equal spoonful of Paddlefish caviar and serve immediately.
