Caviar Recipes - Purple Potato Chips with Creme Fraiche and Osetra Caviar

A delicious, versatile caviar recipe. The perfect appetizer with your choice of any preferred Osetra caviar. We recommend you try NC Osetra Caviar, a local delight.

Purple potatoes

Hot water
Vegetable oil for deep-frying
Crème fraîche

1 ct. (3 oz.)
1 Tbsp.
2 cups
1 bottle
2 Tbsp.


  1. Slice potato paper-thin on a mandoline. Dissolve salt in the hot water; add potato. Soak until water cools completely, about 20 minutes.
  2. Heat 2 inches of vegetable oil in large heavy-bottom pot until 350 degrees on an instant-read thermometer. drain potato slices; pat dry. Fry in batches until crispy but still purple, about 1 minute. Transfer to a paper-towel-lined plate. You can also coat in oil and bake in your air-fryer until crispy.
  3. When cool, top each with 1/4 teaspoon Crème fraîche and 1/4 teaspoon caviar. Serve immediately.
