Dolium Extra Virgin Olive Oils are crafted from the finest Italian olives using modern techniques to preserve their quality and flavor. Both the Dolium Silver (Filtered) and Dolium Gold (Unfiltered) oils are produced through low-speed centrifugation, a method that separates the oil from water without causing the olive pulp to heat up, minimizing oxidation and maintaining a rich, concentrated flavor.
These superior category EVOOs are bottled and fully wrapped in foil to protect them from sunlight, ensuring their slightly fruity flavor is preserved and prolonged.
The name Dolium is inspired by the traditional clay potbelly jar used by the Romans to store foodstuffs, including olive oil and wine, during long sea transports across the Mediterranean.
Production Process
The olives used for Dolium oils are carefully harvested through hand-picking (brucatura) or by gently beating the branches with a stick (bacchiatura). They are collected on fine taut nets and quickly transported to the oil mill to ensure freshness. The modern centrifugation process allows for the extraction of high-quality oil with lower acidity and a rich, concentrated profile.
Unfiltered Gold Oil
- Pros: More intense and fragrant appearance, with micro particles of pulp and olive kernel; packed immediately after pressing for a fresher taste.
- Cons: May have a deposit of micro particles at the bottom (shake gently to separate), more turbid appearance, and a lower resistance to aging.
Filtered Silver Oil
