Our signature cold-smoked trout caviar is made from fresh Rainbow Trout roe, seasoned with sea salt and gently smoked using fine-aged PAPPY VAN WINKLE Bourbon barrel wood stave chips. The result is one of the most incredible palate-pleasers. We were the first company to smoke fish roe in the 2000s and remain the only one today to naturally cold-smoke it without the use of "liquid smoke," making it one of our most popular offerings.
The roe is processed and stored in a cold-smoke environment at low temperatures, allowing the smoke to infuse slowly and safely without overpowering the natural flavor of the eggs. The subtle smokiness leaves a lasting impression on the palate. This caviar pairs beautifully with appetizers, canapés, sauces, fresh oysters, bagels with cream cheese, and a wide range of meat and seafood dishes.
