The Beluga and Sevruga are two of the most popular caviar names in the business. From a hybrid species comprised of Ponto-Caspian Beluga sturgeon (Huso huso) and Stellate Starry sturgeon (Acipenser stellatus), these historically popular species are cross-bred to create an elegant roe perfect for the American market. Traditionally harvested for their roe from the Black, Azov, and Caspian Seas, Sevruga and Beluga became overly popular for the quality of their caviar. Since 2005 the importation of pure Beluga sturgeon caviar has been banned to protect wild populations, therefore, DNA testing of these hybrids helps ensure sustainability. The roe of the offspring of the female Beluga and the male Stellate make a Beluga Hybrid that is beautiful gray to dark amber colors with a rich, creamy, slightly nutty flavor that is unique to only Beluga and Sevurga.
This farmed, sustainable, top-dollar caviar is definitely worthy of a special occasion. The grains are larger than pure Sevruga caviar, but slightly smaller than original wild Beluga caviar. What this caviar lacks in size it makes up for in incredible flavor and smooth texture, with creamy and buttery notes that slowly develop into a lingering, briny, and almost nutty finish.
