Harvested from the wild waters of the Mississippi and White Rivers, our American Paddlefish roe delivers a refined caviar-style experience with exceptional flavor and value.
Though paddlefish is not a true sturgeon, it's most-commonly called "caviar" due to its close resemblance in looks and taste to traditional caviar, especially Sevruga-style caviar from the Caspian Sea. The pearls range in color from soft olive green to deep steel gray, with a delicate texture, smooth pop, and clean briny finish.

My first bite felt really different in a negative way, my second bite however was delightful. "Softer" than expected at first it grew on me. Made to eat on cracker, bagles or anything. Too gentle a flavor to use in cooking however. I will order again.
