Roe of American Paddlefish - Polyodon Spathula

Description

Often called “spoonbill” for its distinctive paddle-shaped snout, the American Paddlefish (Polyodon spathula) is a freshwater species native to the Mississippi River system. Harvested from the wild waters of the Mississippi and White Rivers, our American Paddlefish roe delivers a refined caviar-style experience with exceptional flavor and value.

Though paddlefish is not a true sturgeon, it's most-commonly called "caviar" due to its close resemblance in looks and taste to traditional caviar, especially Sevruga-style caviar from the Caspian Sea. The pearls range in color from soft olive green to deep steel gray, with a delicate texture, smooth pop, and clean briny finish.

Bold yet balanced, Paddlefish roe offers earthy, savory notes that make it a standout addition to blini, crème fraîche, canapés, seafood towers, or a classic caviar board. Elegant, approachable, and full of character, it is an excellent choice for both seasoned caviar lovers and first-time tasters.

Each jar is hand-packed and carefully inspected to ensure ideal egg size, freshness, and flavor consistency. Whether you’re new to caviar or a seasoned connoisseur, Paddlefish roe offers the sophistication of traditional sturgeon caviar without the premium price tag.

I've tried several types of caviar / roe and this one is by far my favorite. To my pallet it has a nice buttery flavor with a touch of nuttiness and brine. I can't thank the folks at Caviar Star enough for being so great to order from!

My first bite felt really different in a negative way, my second bite however was delightful. "Softer" than expected at first it grew on me. Made to eat on cracker, bagles or anything. Too gentle a flavor to use in cooking however. I will order again.
