Just outside Bordeaux, in the lush Dordogne region, lies the Prunier Farm, where some 150,000 sturgeon thrive in natural surroundings. Situated along the River Isle, the farm’s open-water circuit allows the sturgeon to live in harmony with the woodlands and waterways of Montpon-Ménestérol, producing caviar of unparalleled character.
Prunier’s legacy reaches back to 1872, when the house began refining the art of French gastronomy. In 1921, it opened the world’s first dedicated caviar house, serving roe from sturgeon once fished along the rivers of Bordeaux. Today, Osetra sturgeon—once native to the Caspian—are raised with the same respect and expertise, their care spanning more than a decade before reaching maturity. The result is a caviar with glistening, generous pearls, malossol-cured to preserve their pure flavor and delicate texture.
