An organically-farmed, sustainable hybrid Beluga caviar. The Beluga and Sterlet are two prized sturgeons historically harvested for their roe from the Black, Azov, and Caspian Seas. Since 2005 the importation of pure Beluga sturgeon caviar has been banned to portect wild populations, therefore, DNA testing of these hybrids helps ensure sustainability. The roe of the offspring of the female Beluga sturgeon (Huso huso) and the Sterlet (Acipenser Ruthenus) make a "Bester" Hybrid that is beautiful gray to dark amber colors with a rich, creamy, slightly nutty flavor that is unqiue to only Beluga and Osetra.
This farmed, sustainable, organic caviar is definitely worthy of a special occassion. The grains are larger than pure Sterlet caviar, but smaller than original wild Beluga caviar. What this caviar lacks in size it makes up for in incredible flavor and smooth texture, with creamy and buttery notes that slowly develop into a lingering, briny, and almost nutty finish. The flavor had a bit of brine, so not completely bland, but the texture was not what it should have been. Not only no "pop", but basically just mush. Very disappointing as we have enjoyed several of your Belgian caviars in the past
