We had a great time enjoying this American Hackleback along side the Paddlefish and Bowfin caviars over the 4th. Simply served with creme fresh on kettle chips with Champagne! For some it was their first caviar experience, and was a bit hit!

I prefer hackleback to beluga. It's not quite as salty, and has a deeper umami. It is also MUCH more reasonably priced.
