Artisan cheese refers to cheese that is produced by hand using the traditional craftsmanship of skilled cheese makers. As a result the cheeses are more complex in taste and variety. The protected origin of this artisanal cheese is Castilla la Mancha Spain, a region made famous in the novel Don Quixote. La Mancha comes from Arabic origins meaning, the dry land or wilderness. La Mancha is the largest plain in Spain. Its climate is semi-cold and arid which is perfect for windmills and sheep.

Our Raw Milk Manchego Cheese is aged 12 months and is made from the milk of the Manchega sheep. It is a truly small scale artisan product. Hand formed, hand wrapped and dry cured for a year under close inspection it has a straw colored rind and creamy pale yellow interior with a firm texture. The robust flavor is floral, nutty and sweet reflecting the rugged Spanish countryside that the sheep graze on.
